Grilled sea bass with lime

  • 1Preheat the oven to 400°F (200°C). Cut the zucchini into thin slices lengthwise. Brush them with 3 tbsp oil and place on a baking tray lined with baking paper. Bake them for about 10 minutes in the middle of the oven.
  • 2Squeeze 2 limes and halve the other 2. Cut the chilli pepper into strips. Heat the butter in a saucepan. Fry the chilli pepper and the spring onion for 2 minutes. Add the lime juice.
  • 3Heat the grill pan. Pat the sea bass dry and brush with the rest of the oil. Season with salt and pepper and grill the fish for 6 minutes until done. Turn the last minute. Grill the lime halves in the corners of the grill pan.
  • 4Place the fish in an oven dish and pour the sauce over it. Garnish with the zucchini and lime halves. Also delicious with pandan rice.
