1Preheat the oven to 400°F (200°C). Cut the zucchini into thin slices lengthwise. Brush them with 3 tbsp oil and place on a baking tray lined with baking paper. Bake them for about 10 minutes in the middle of the oven.
2Squeeze 2 limes and halve the other 2. Cut the chilli pepper into strips. Heat the butter in a saucepan. Fry the chilli pepper and the spring onion for 2 minutes. Add the lime juice.
3Heat the grill pan. Pat the sea bass dry and brush with the rest of the oil. Season with salt and pepper and grill the fish for 6 minutes until done. Turn the last minute. Grill the lime halves in the corners of the grill pan.
4Place the fish in an oven dish and pour the sauce over it. Garnish with the zucchini and lime halves. Also delicious with pandan rice.
